Tasting: Light fresh tannins, elegant and perfect “dinner” wine. Can be consumed directly.
Technical: Harvest is made by hand in the end of October. Grapes rest in steel tanks with indigenous yeasts with the skin. After fermentation the wine is put in barrels for eight to nine months for refining.
Winery: The winery is located in the Etna wine area on the north side of the volcano, subjected to high temperature variations and mineral rich soils. Mr. Valenti bought the wine yard 2002 and the first harvest was made 2006. The winery has several yards from Passopiscaro to Castiglione and by the Etna slopes.
Additional information: The name Norma comes from the Bellini opera due to owners interest in poetry, lyrics. Pasta alla Norma is also typical pasta dish from Catania.
