Tasting: Nice cherry taste covered by hints of plum and chocolate. Silky texture and pleasant tannins with long aftertaste. Can be consumed directly.
Technical: Vines are reduced by 50% to produce excellence in a terroir of clay mix and tufaceous soil. Grapes are harvested by hand, then destemmed, warm maceration with skins for 10-20 days with controlled temperatures. Fermentation in stainless steel tanks and then ages in barrels for six months for final refined character. Aged in bottle for six months before marketing.
Winery: Altitude of the yard is 400 m.a.s.l. in south Sicilian mountains with constant wind passing the vines and touching sea breeze. The yard is exposed to hot Sicilian sun and fresh shifting night temperatures. Organic certification since 1997.
