Tasting: Nice texture. Strong aromas in an old fashioned way. Strong and dry wine with good and stable content of tannic acid, which keeps the flavour and fragrance of Etna rewakening the fury of the volcano.
Techninal: Late yearly harvest in October. Manual work process with natural organic fertilization. Prevalent treatments based on Bordolese mash (compose of copper sulphate and hydrated lime) and sulphur. Aging in steel tanks. Bottling after two years.
Winery: Tree sapling and espalier made of low yield sapling at 600 m.a.s.l. Volcanic soil, exposure Etna north. Age of the vineyard is 60 – 100 years. Wine fields built on terraces where the wind passes easily between the ranks and excess water flows away. Family owned wine fields with wine production since 1880.
Mythological story: Kirnao means volcano crater and wine container. Zeus threw the monster Tifeo in the Etna crater after a long fight. When Zeus came to Sicily he had his Kirnao, wine container, with him.
