Tasting: A fresh fruit trip that leaves a pleasant soft touch. Light acidity. Let breathe couple of minutes before consumption.
Technical: Fermentation with controlled temperatures and selected yeasts. Aging in steel tanks and minimum six months in bottle before marketing.
Winery: Wineyard is located 750 m.a.s.l. on the north side of Etna volcano. Grapes grow on volcanic soil rich of minerals, built on terraces where the wind passes the vines naturally. Wineyard is filled with fruits, vegetables, herbs and much more that you may taste in the wine. In this area day and night temperatures vary greatly. Wineyard was bought 2002 by Mr. Wiegner and first harvest was 2007. Wineyard became organic 2017.
Additional Information: Mr. Wiegner is born in a wine family in Tuscany and lived in several countries. He knew wine on volcanic soil was special and only two places in the world has the best volcanic soil; Iceland and Sicily.
